Smoked salmon deviled eggs

Hard boiled eggs with stuffing or just cut in half with a touch of mayo and spices. This was always present on the table whenever my parents would host any kind of party. A staple for Sunday brunch and really a must have for Easter breakfast. They are easy to prepare, easy to eat and super delicious not to mention how good they are for you. Eggs are low in calories but super rich in complete proteins, vitamins and minerals. With all the benefits they are the super food that should be a part of our daily healthy diet. Our family loves eggs and we always try to find new ways to enjoy them! Today’s recipe is one of our favourite as it contains an ingredient that we all love – smoked salmon. You will need:

12 large eggs

4-5 slices smoked salmon

1/2 cup mayonnaise

 24 capers or 1sour pickle

1 Tbsp chopped chives

1 Tbsp chopped fresh dill

pinch ground black pepper and cayenne

This is how you do it: 

Boil the eggs hard, peel and cut in half lengthwise.  ( To perfectly boil eggs place them in a pot, cover with cold water by 1 inch. Bring to boil, turn off the heat, cover the pot and wait for 10 minutes ). Gently remove yolks without breaking the white part. Crush the yolks with a fork, add finely chopped smoked salmon, dill and chive. Add mayo and black pepper. Mix well. Fill the white parts with the paste equally, top with capers or finely diced sour pickle. Sprinkle with cayenne pepper.
