One bite mini donuts in 10 minutes!

Whether for Shrove Tuesday celebration or just to satisfy your sweet tooth I have something good for you today! One bite mini donuts are very easy to make and if you have 10 minutes and basic baking ingredients on hand you are ready to go! One of my favourite ways of spending time with family is cooking and of course eating together. With kids being older now, they often take the lead in the kitchen and try to make even more complicated meals. But the recipe I am sharing today is so easy that even the smallest children can get involved and have fun! Breaking eggs, mixing and dusting with icing sugar is perfect for all little hands :)

You will need:

2 cups whole spelt flour (whole wheat or regular pastry flour is good )

3 eggs

1/2 cup sugar ( I used cane sugar )

1 cup plain Greek yogurt ( you can also use vanilla or any flavour you like )

2 tsp baking powder

1 tsp vanilla extract

1/4 tsp ground cinnamon

1/4 cup icing sugar for sprinkling ( optional )

1 liter oil for frying

This is how you do it :

Pour oil into a pot ( about 2 liters in size) preheat on medium temperature. In a large bowl whisk together eggs and sugar ( just so the sugar can dissolve a little ) add yogurt and vanilla, stir, add flour, baking powder and cinnamon. Stir well for the ingredients to combine well. Test the oil if it’s hot enough by placing a tiny amount of dough in the hot oil. If it bubbles it means the oil is ready. Using two spoons, place dough on one spoon and scrape it off with the use of the other spoon ( as showed on the picture ) Cook for about 1 minute until golden brown and turn on the other side. Do not overcrowd the pot.  I cooked about 6 -8 donuts in one batch. When ready place on the paper towel to absorb the oil. Dust with icing sugar. Enjoy!
