Best three beans crock pot chili with fire roasted tomatoes

Who doesn’t like coming home on a cold and dark evening and be welcomed by a house filled aroma of a warm meal waiting to be served? I know I do! Fall and winter is a time when on an occasion I pull out my old crock pot. Usually on a day when I know I will come home too late to cook a meal from scratch. One of the best crock pot meals are stews and chilies. Chili that is made with dry beans requires longer cooking time. It is so good and with great benefits to our body to add beans to our diet. Rich in fiber and they keep us full longer preventing us from snacking in between meals ;) They are high in antioxidants, protein, B vitamins, iron, copper, zinc and potassium. Eating beans on a regular basis can help prevent colorectal cancer, decrease the risk of diabetes and heart disease just to name a few. Lets eat beans my friends!

You will need:

1 cup each: navy, black and kidney dry beans

2 x 796 ml cans fire roasted crushed tomatoes  ( I used organic MUIR GLEN )

1 lb ground beef ( optional)

1 lb brown mushrooms (sliced )

2 medium carrots ( diced )

1 large onion (diced )

2 zucchinis (diced )

1 medium head garlic ( crushed and roughly chopped )

1 small hot pepper ( finely chopped )

1 Tbsp ground black pepper

1.5 Tbsp ground cumin

about 1 Tbsp salt

1 Tbsp dry oregano

water ( fill an empty tomato can 796 ml)

olive oil for frying

7 quart slow cooker

This is how you do it:

Rinse and soak the beans in the water for minimum 4 hours ( overnight works well).

If you are in rush you can just put all the ingredients in the crock pot, stir and wait for it to be done but I highly recommend to take the steps bellow for a deeper and richer flavour. 

Place the soaked, drained  beans in the crock pot. On medium high heat brown the meat ( if you are using it). Place in the crock pot. Brown the mushrooms, carrots, onions and zucchini and when almost done add garlic. This way you will prevent the garlic from burning and turning bitter. Place in the crock pot. Stir all the spices with tomatoes and add to the crock pot. Add 1 can of water. Stir everything well. Cook on high for 6 – 7 hours or on low for 9 hours.

Serve alone, with garlic bread or on cooked rice. It tastes delicious with some cheddar cheese :)

browning the mushrooms and the rest of the vegetables along with the meat ( if you choose to add ) builds more layers of flavour. If you prefer to skip those steps no worries it will still taste very good :)
