Back to school and simple plum cake with sweet crumble

It is hard to believe that the Summer vacation is over since the summer itself is still in a full bloom! … but yes, today is the day and the kids went back to school. Beginning of each new school year is always full of mixed emotions torn between sadness and excitement. I really like my two kids around the house all day, so to me it will be a hard adjustment.  Luckily both Maria and Bryan are happy to see their friends again and to try their new pencils ( they really know how to enjoy the little things :) ). Starting a new grade is a new chapter in life, therefore, every year we do a little celebration. Nothing huge but homemade cake is a way to go. This year we made simple and delicious cake with my favourite fruits for this time of the year – Italian plums – and to make it even more festive we topped it with sweet crumble. The entire cake was so light and moist that it disappeared almost instantly. I barely was able to save a little piece for the kid’s lunchbox!

You will need:

2 cups flour ( spelt, unbleached wheat\cake )

1 cup fine sugar

1 cup unsalted butter ( room temperature )

4 eggs ( preferably room temperature )

2 tsp baking powder

1 tsp vanilla extract

15 – 30 Italian plums ( 15 for single layer and more if you prefer super plum cake )

dash of cinnamon ( optional)

9″ square baking dish

For simple crumble:

1/2 cup unsalted butter

1/2 cup sugar

1 cup flour

This is how you do it:

Sift flour and baking powder together. Cut plums in half lengthwise and remove pits.  Preheat oven to 180C/ 350F. Lay baking dish with parchment paper or grease with some butter and dust with flour. In a large bowl place butter and sugar and beat until fluffy and light in colour. Add vanilla and 1 egg at the time ( make sure the butter is smooth before adding another egg ). Slowly keep adding the sifted mix of flour and baking powder while slowly stirring the cake batter.  Spread the batter evenly in the baking dish. Layer plums with the cut side up, sprinkle with a little bit of cinnamon.  If you like more plums just simply add another layer on top of the first one.  Sprinkle with crumble.

Bake for 60 minutes. Cool and enjoy!

Crumble:

Using a fork or pastry cutter, quickly chop together flour, sugar and butter until bread crumbs like texture.
