Crunchy kale chips

The best part of our organic food market besides the closeness to our home is  the variety of fresh, organic produce in very competitive prices. And if this is not enough, they constantly offer in store daily specials on couple of different items so every visit is even more exciting since I don’t know what I will find on sale each time. This often determines what we will have for dinner on this particular day:) Currently they have an amazing price for kale, therefore the entire week is a kale week in our house. We had delicious white bean and kale soup, sauteed kale with olive oil, mushrooms and tons of garlic, kale and cheddar pierogies and something that we went completely crazy about: kale chips. I have to admit that I heard about the kale chips for a while now and I see them in the stores everywhere but I never made my own until recently. Everything thanks to Dr. Oz and his family cook book. I purchased one not long ago because I was looking for good vegetarian recipes as I wanted to introduce more of it to our diet. So far we are obsessed with those chips. Full of flavor, easy to make and seriously addictive! So of course when my little store sells organic kale for almost next to nothing we know that the chips will be in every bowl we can find in the house! The recipe below is exactly like the one in the book and I have to say it is absolutely delicious but you can easily adjust the spices to your liking or to what spices you have on hand.  Even plain with olive oil and sea salt only is great.  The most important part is the method of cooking to ensure, crispness and avoid burning. You will need:

1 large bunch kale

3 Tbsp extra virgin olive oil

2 tsp dried oregano

2 cloves garlic ( minced)

1/2 tsp truffle infused salt

1/8 tsp cayenne pepper

1/4 cup hemp seeds

2 large baking sheets

This is how you do it:

Position two racks in the top third and center of the oven. Preaheat oven to 300F/150C.

Remove kale leaves from stems. In a bowl mix olive oil, oregano, garlic and salt. Pour over kale leaves and toss well  to cover evenly. While tossing slowly sprinkle the leaves with hemp seeds. Divide kale into 2 even portions and spread evenly on the baking sheets. Place the sheets on the racks and bake for 20 minutes. Stir gently the kale and switch the position of the sheets from tom to bottom. Bake for another approximately 20 minutes. I usually check it after about 10 minutes and sometimes it is enough for the kale to get crispy. I guess it depends on how thick the leaves are. They will get even more crunchy when they cool down completely.

pour the olive oil mixture over the kale and toss well. The leaves have to be well covered
