Sunny sandwich for good start of the day

Wherever we turn we always hear that breakfast is the most important meal of the day, but sadly it is the one meal the most of us tend to skip. I was guilty of that for the longest time but a while ago I decided to change it and I have to admit that this was probably one of the best decisions I ever made. Having good, nutritious  breakfast keeps me full for a big part of the day, gives me more energy and helps me  stay focused. I don’t have to snack in between meals and I even limited coffee to one in the morning because I don’t need to boost my energy in mid day anymore.

Today, I want to share one of my favourite options, warm sandwich, protein bomb that you might find appealing specially on days when the morning is cold and dark. Fall is coming.

You will need:

For one sandwich:

2 slices bread ( whole grain recommended)

3 slices smoked salmon (  Norwegian is my first choice )

1 large egg

1-2 tsp mayonnaise

pinch of salt and paper

1 lemon wedge

1 clove garlic ( optional)

baby onion sprouts ( or any sprouts you love)

oil or dub of butter for frying egg

This is how you do it:

Preheat frying pan on medium heat, add couple of drops of oil or 1/2 tsp of butter. Slowly crack egg so the yolk stays intact, sprinkle with pinch of salt and pepper. In meantime make 2 toasts. Rub garlic on warm bread (optional) and spread mayonnaise.  On one slice of bread lay salmon, squeeze the lemon wedge and put sunny side up on top of it. Finish with some sprouts, cover with a second piece of bread and enjoy! Fantactic with a glass of orange juice or cup of coffee.

This kind of sandwich makes a fantastic lunch or even dinner if you par it with tossed greens salad.
