Pancakes with stewed peaches

 

August is here and so are the fresh fruits! On the weekend we visited a local farm to pick some fresh fruits and veggies. Peaches are always welcomed in our home and we always buy more then we probably should:) Since ripe, ready to eat juicy peaches are not easy to store we always try to use them in many possible ways.  One of our  favorite ways to prepare them,  is to quickly stew them and and serve with pancakes. Great, nutritious breakfast, brunch or just a afternoon snack.

You will need:

pancakes:

1 cup flour

1 cup milk

1/2 tsp vanilla extract

1/2 tsp cinnamon

1-2 tsp sugar

1 tsp baking powder

pinch of salt:

peach stew:

5-6 ripe peaches

3 Tbsp butter

1/2 tsp cinnamon

1/4 cup sugar

garnish:

greek yogurt or sour cream

mint leaves

This is how you do it:

In a bowl combine milk, eggs, vanilla extract and sugar. Whisk gently. In a bigger bowl combine flour ( sifted better) baking powder, cinnamon and salt. Add milk mixture, stir all together until smooth. Set aside.

Cut peaches into small wedges ( you can peel them or leave skin on).  In a pot melt butter add wedged peaches, sugar and cinnamon. Stir and let it simmer  simmer.

Preheat small frying pan on medium heat. Pour 1/3 cup of pancake batter and fry until golden brown. Turn over. When pancakes are ready stuck 3 or 4 together, pour warm peaches and top it with 1 Tbsp of greek yogurt ( sour cream) and couple of fresh min leaves.
